Tis the season for pumpkin-flavored everything. While some treats are best left to the PSL-obsessed (we have very mixed feelings about PSL yogurt), these pumpkin pancakes are an autumnal dream come true. Here’s how to flip up a batch yourself.
What You Need
1¼ cups flour
¼ cup brown sugar
2 teaspoons baking powder
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 cup buttermilk
½ cup pumpkin puree
1 tablespoon vegetable oil
1 teaspoon vanilla
Step 1: Combine the flour, sugar, baking powder, cinnamon, and nutmeg in a bowl.
Step 2: In a separate bowl, beat the egg before adding the buttermilk, pumpkin, vegetable oil, and vanilla.
Step 3: Whisk the wet ingredients into the dry ingredients until well combined.
Step 4: Coat a griddle or frying pan with butter and pour on the batter. Flip when bubbles start to form in the center of the pancake. Serve warm with maple syrup and butter.
