Meet the (New) Most Important Meal of the Day: Brunch


If you combine friends, Pinterest recipes (that I’ve admittedly been drooling over since I pinned them), and brunch all in one Sunday, it’s going to be a good day. This past Sunday, dreams (and the desire to overindulge) came true – and the Pinterest Brunch Party was born. Now, if there’s one thing I love, it’s food, so the hardest part about this endeavor was narrowing down the options… but here’s where we ended up.

The Menu

Brownie Batter Pancakes
This take on the typical pancake was such a fun addition to our spread. Be sure to keep them small (about a three-inch diameter) and serve in stacks of three or four with a toothpick.

Baked Eggs in Avocado
These were the only casualty of the bunch. Not only did I complicate things by adding coppa and pepper jack cheese (delicious, yes, but it increased the cooking time), I decided to cook them in a muffin tin. Do not, I repeat, do not, do this – it left each avocado half sporting a muffin-shaped egg-white tail. Not a good look.

Bacon & Egg Bites
Honestly, anything wrapped in bacon is okay by me, and this bite-size rendition on the classic bacon and eggs was a definite hit. Make sure to have a few yokes runny and a few cooked through to ensure everyone gets their eggs just the way they like them.

Itty Bitty Cinnamon Roll Bites
Crazy easy to make and equally yummy, these sweet morsels were the perfect little dessert.

Bloody Marys
What brunch is complete without a good old-fashioned bloody mary? This recipe was the ideal combination of spicy and tangy. Though the tipsy (a.k.a. floating-in-vodka) blue cheese-stuffed olives we added were by far my favorite part.
