Summertime is here, and the living is… balmy. We’re cooling down with the Avocados From Mexico brand by bringing you a few tips to sip, savor, and self-care your way through the season, from a smoothie that will transport you to the tropics to a crisp salad that requires minimal kitchen time. Don’t sweat it – we’ve got your new favorite post-beach treat (or anytime treat) right here. With all of its tropical flavors, this light smoothie is giving us major Caribbean resort vibes, and we can practically feel the ocean breeze.
MANGO, COCONUT, & AVOCADO SMOOTHIE
Ingredients:

2 cups frozen mango
-
1 ripe, pitted, and peeled Avocado From Mexico

1 cup coconut milk
-
1 cup water
Instructions:

In a blender, combine the avocado, mango, coconut milk, and water. Blend until smooth. Serve.

Savor
For real, the last thing we feel like eating when the temps are pushing 90 is something heavy or something that requires spending time over the stove. Enter the summer fruit salad. Tossed with a sweet-meets-tart mandarin orange vinaigrette, this salad will fill you up and cool you down with avocados, strawberries, and mandarin oranges on a bed of crisp green. Enjoy as a side or make it the main event with a protein like chicken, shrimp, or tofu.
Ingredients:

8 oz canned mandarin orange segments, drained (keep juice)

6 cups baby spinach

2 cups arugula
-
1 pint strawberries, hulled and sliced

1 small red onion, thinly sliced

1 medium Avocado From Mexico, sliced

1/4 cup olive oil
-
3 tbsp apple cider vinegar
-
2 tbsp honey
-
2 tbsp reserved mandarin orange juice
-
1/2 tsp Dijon mustard
Instructions:

In a small bowl, whisk together olive oil, vinegar, honey, mandarin orange juice, and Dijon mustard until well combined.

In a large bowl, combine spinach, arugula, strawberries, mandarin orange segments, red onions, and avocados.

Toss gently with dressing. Plate and serve.

When the mercury starts rising, kick back and indulge in a little you-time with a refreshing avocado aloe eye mask. With only three ingredients, this creamy, soothing mask will take you to the chill zone in minutes.
DIY COOLING AVOCADO ALOE EYE MASK
Ingredients:

Fully ripe Avocado From Mexico

Aloe vera gel
-
Cucumber, seeded with the skin on

1 tsp rose water, optional
Instructions:

Blend equal parts avocado, aloe vera, and cucumber in a blender or food processor until smooth. Add rose water if using.

For a thicker paste, increase the amount of avocado and decrease the amount of cucumber.

Seal in a small jar or plastic bag to thoroughly chill and store before enjoying your mask.
